Gluten Free Bran Muffins

These moist and delicious muffin taste amazing and you'd never know they were healthy. When I was growing up Bran muffins were the health food of choice for many years.  Then we realized they were actually not that healthy. But they did taste good.  Well, my husband and kids love muffins.  So I started experimenting with ways to make them healthier and still taste amazing.  These are a modification of the Bran Flax Muffins made with wheat flour. I used less sugar and replaced regular sugar with coconut sugar. I have made these using regular milk and with a milk alternative and they both taste great.  I like using golden flax meal because it has a milder taste. You can't tell these muffins have lots of flax meal. These muffins are full of carrots and apples, omega's,  and lots of healthy fiber.  They are great for a quick breakfast on the go, a snack, or in my kids lunches.  I love when healthy and yummy combine to make a great muffin.

Gluten Free Bran Muffins

Ingredients
  • 1 1/2 cups Gluten Free All-Purpose Flour (I use Bob's Red Mill)
  • 3/4 cup Golden Flaxseed Meal
  • 1/2 cup Oat Flour
  • 3/4 cup Coconut Sugar
  • 2 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1 tsp Salt
  • 2 tsp Cinnamon
  • 3/4 cup Milk or Milk Alternative (I use Ripple Milk)
  • 2 Eggs
  • 1/2 cup Oil
  • 1 tsp Vanilla
  • 1 1/2 cups Carrots (grated)
  • 2 apples or about 1 cup Apples (peeled and grated)
Instructions
1. Preheat oven to 350 degrees. Add dry ingredients to the bowl of a stand mixer. With a spoon, combine dry ingredients.2. Add remaining ingredients to mixing bowl and beat on medium speed until well combined. 3. Add batter to greased muffin tins.4. Bake 20-25 minutes or until cooked in center and light brown on top.

Gluten Free Cranberry Crumble Bars

These melt in your mouth crumble bars were adapted to gluten free using oat flour and almond flour.  They hold together well and taste amazing. They are great for a dessert, a holiday brunch, or anytime you want a little sweet and a little tart combined.  The crust tastes like an oatmeal cookie, moist and sweet.  I usually don't use refined sugar but it's the holidays so I let my standards go a little. I tried to make these vegan by using coconut oil but I could not get them to stick together even when using a chia egg.

Gluten Free Chocolate Maca Energy Bars

Finding a healthy granola bar that is healthy and all my kids will actually eat is nearly impossible.  But I finally succeeded!! I was tired of paying so much for bars that my kids didn't eat and that costs like a million dollars. I have made many, many batches of granola bars that were  "too healthy" and my kids (and my husband) wouldn't touch them. (Ok, maybe trying to add powdered green was a bit ambitious).  So I  finally came up a recipe that will give my kids some nutrients and they will actually eat them.  We all like these and they are great for a quick breakfast on the go, a hearty snack before sports. or even as a meal replacement bar.  They are high in fiber and protein. They also have omegas, healthy fats, and Maca to increase your strength and stamina.  I added the maca since I give these to my kids before sports and it gives them lasting energy. I wrap these individually and freeze them.  I throw them in lunches or grab them on the way out the door.  Easy to make!  Great on the go! Full of nutrition!

Gluten Free Granny Cookies

This Granny Cookie recipe has been in my husbands family for over a hundred years.  It all started with my kids great great grandma.  Every year right after Thanksgiving the cookies would show up.  Sometimes brought over and sometimes shipped.  But there were always Granny Cookies.  So when the celiac diagnoses came I knew I had to modify great grandma's recipe. And it worked! These are crispy and sweet and my kids don't notice the difference (yay!!) I also use this recipe for cutout gingerbread cookies.  Just add a teaspoon of ginger to the recipe.  So thankful for family traditions and the joy they bring our family.

Gluten Free Herb Focaccia Bread

Who doesn't love a good focaccia bread with some pasta or a bowl of soup?  I couldn't find any in the store so I decided to make my own.  After some experimenting I came up with this recipe.  I like the texture and the taste and have been using the leftovers for sandwiches.  And I love that it has no rice flour in it.  I used sorghum flour, which is more nutrient dense and is a whole grain. With rice being high in arsenic I have been trying to cook with it less. The gluten free diet so high in rice so I like to vary the flours I use.  Sorghum and Almond flour work great in this recipe.

Gluten Free Herb Stuffing

This gluten free herb stuffing will not disappoint. The fresh herbs make this recipe stand out. It will be loved by all.  No one has to know it's gluten free. This recipe was adapted so my family members with Celiac disease could enjoy all their holiday favorites safely. It can also be vegetarian if vegetable broth is used. This recipe works great in a cast iron skillet or in a glass baking dish. Soft and Fluffy Gluten-Free Pull-Apart Rolls

Everyone loves a soft fluffy dinner roll.  These are the gluten free version I came up with for my family to enjoy at the holidays, with soups or with dinner.  They are moist and have a great flavor.  I love using the cast iron skillet for this recipe.  The walls of the skillet help keep the rolls from thinning out too much and they rise beautifully.  Serve with butter, jam, honey or just eat plain.  These are a welcome addition to any table.

Pumpkin Pie with Gluten Free Flaky Pie Crust

What would Thanksgiving be without Pumpkin Pie? It's a tradition we all grew up with  and when my husband and kids got the Celiac diagnosis I knew I had to find a way to continue all our holiday food traditions.  The only hard part for gluten free pies is the crust.  Once you get that down the fillings are easy to alter and most are naturally gluten free.  So here's my traditional crust that's been tried and tested for years.  It's easy to make and work with (compared to the crusts I used to make)  Adding an egg really helps it bind better. I don't mess with the dough much.  As soon as the dough is combined I put it in the refrigerator, let it harden a little and roll out.  It's easy.  I made the filling with milk free options and they taste great.

Gluten Free Apple Crisp

Its Fall and apples and pumpkins are everywhere.  And it's time for lots of apple and pumpkin recipes that are gluten free.  Here's my apple crisp recipe that will be loved by all.  I will bring this to holiday parties, Thanksgiving, or use as a Saturday night treat with friends.  No one will know its gluten free.  It tastes amazing.  If you want to use a little less butter (2 tablespoons) it will turn out a little more crumbly but still taste great. You can also use coconut oil in place of butter and it tastes great.  Enjoy fall and all the amazing gluten free foods that go with it.

Easy Gluten Free Pumpkin Muffins- Healthy and Delicious

I am always trying to find ways to make recipes gluten free and healthier.  Sometimes they are too healthy (according to my family) and I have to revise them so my family will eat them.  So, after many attempts and failures I landed on these.  These muffins are simple because they use Pamela's Gluten Free Non-Dairy Pancake Mix.  It is made with sprouted grains and is high in fiber.  I also used coconut sugar which is a lower glycemic and unrefined sugar.  And I used unsweetened almond milk instead of regular milk. The pumpkin adds fiber and immune boosting antioxidants and the almond flour adds in protein and is high in the antioxidant Vitamin E.

Gluten free granola bars are expensive and can have lots of sugar and preservatives. So after countless trial and error I came up with a recipe that was healthy, simple, and liked by all my kids (no easy task). Even my daughters teenage dance friends like them. These are great for breakfast, as a snack, or in lunches. They are packed with nutrients and low in sugar. The Hemp Hearts add protein, Omegas, vitamins, and fiber. And along with the oats and almond meal they are high in protein. They can be frozen for up to 2 weeks and still taste great. Old Fashion Gluten-Free Cornbread - A Fall Favorite

This moist and hearty cornbread is a fall favorite the whole family loves. As a mother with a husband and children that have Celiac disease I knew I had to change all our families favorites to gluten free. I adapted this cornbread so it would be appealing to both gluten-free and non-gluten-free friends and family. When I first started baking gluten free I thought all cornmeal was gluten free but soon realized it wasn't (due to cross contamination). So make sure you buy a cornmeal that is gluten free and organic if possible (so it is non-GMO) I use Arrowhead Mills. It's organic, gluten free and non-GMO. This cornbread is great with soups and stews, or with a little honey or jam.
